Pool Day...finally

I'm not going to lie, my week has been not what I had hoped.  To say I was dictated by my bowels would be an understatement.  I did take my scooter out a couple times, but beyond that, my hermit status is secure.  I really have not been able to take baby, my camera out like I would like to, but low and behold, a camera shot literally came to my front yard.


I love the herd of deer that have the run of our neighborhood.  (well not when they eat my tulips).  We all talk about the family of deer who go through my driveway, graze across the street and back to the creek, and then sleep at our neighbors house behind us.
This weekend, finally my "issues" have started to behave.  Saturday, LL and I tinkered around the yard, went to Lowe's in Salem, went for a very long scooter ride around Silverton and then rode to Mt. Angel and visited with Kris and Steve and then a quick stop at Mom's.  It was a nice way to spend the day.

Sunday, today we have done something we had not done this summer.  Because of spending time at our campsite, the weather, and family picnics, we haven't just spent time around the pool and hot tub.  Today, Kane came over, Bailey babysat this morning but was home by afternoon, Max was with us, and we just stayed home and enjoyed family time around the pool.  Well I did make a quick trip to Mom's because Aunt Leone left tons of produce.  SCORED!!  Fresh green beans, beets, cucumbers, zucchini, and marion berries which I think came from Uncle Leo.  Anyway, I digress.  So Kane prepared to jump in.




LL got in after that.  Isn't the water beautiful?

And then they decided to make up and bond in the hot tub.  Which I ended up joining them.


But pretty much I did what Bailey did.


Sat by and just watched with total relaxation.

After all that.  I ran to the store to pick up steaks to barbecue and when I got back, Kris and Steve was over for a visit.  Tried to talk them into staying for dinner but they had already ate.  After they left, I grilled steak, and we had bake potatoes to go with it.  I have not ate because frankly I am a little scared of spending the rest of the night having "issues".  So I think I will wrap my steak up and eat it tomorrow for lunch.  Seriously hate my digestion, but sure love summer weekends.

Just my fun play on Neil Young's Cinnamon Girl.  I know, I know!  You are thinking "is she really going to go there..........again".  Why Yes, Yes I am.

I have had such a bad 5 days.  Today is a beautiful day.  I want to go out on my scooter.  Go to the Oregon Gardens, go ride around.  Maybe even get a few things done around the house.  Because a sty is being kind when describing my home.  But when I have had a bad day or two in recent months, usually after a few hours I am done for a few days.  Right now this is like a slow drip.  Sorry for that visual:(  So I am considering "moving" things a long so that maybe, just maybe I will have a little freedom for the next day or two. 

I routinely have to be the enema girl for check ups and exams, but am thinking I may have to take an aggressive move to just get things going.  Not that I really want to, but I have lately had a glimpse of freedom and 5 days of "issues" is enough already.  Don't worry, I wont give you a moment by moment update.  But if I follow this post by pictures of landscape and the gardens, well.....you know the rest.

My Girl Is 19

Happy Birthday Bailey!

Kind of an old picture.  Bailey runs from the camera, so I had little to choose from.  My Baby is 19 yrs old today.

LL, Max, and I are going to be around for most of the day.  Then we are taking off and going to Miller's Crossing to camp for a couple days.  Yippee!!

I had a very rough night last night so I am tired.  Luckily, LL has the day off so he will help get things ready.  I don't feel up to a lot of cooking, so hamburgers and hotdogs for the guys, and I will probably take my stash of gluten free meals I made last week that is in the freezer. 

I am looking forward to long walks and I downloaded to my ereader The Help.  So I will start that book this weekend.  I have been told once you start reading it, you do not want to put it down.

Exciting Path

As a parent, one of the most rewarding times is when your child is on the path that they have chosen and they are excited and ready for what ever comes next. 

When I was in the hospital for the first of many surgeries a couple years ago, a light bulb when off in Bailey's head and she knew she wanted to do something in the medical field.  After researching, she decided she either wanted to go into nursing or a medical technician.  But right now, getting into those programs are hard and expensive.  So her plan was to become a phlebotomist and lab technician.  Work at that for a couple years and then try to get into a nursing program or med. tech.  If she is working at a hospital as a phlebotomist, the hospital will help pay for your schooling.  Great plan. 

But she graduated from high school too late to get into the phlebotomist program last summer.  She didn't like the other schools she looked into, so she had to wait a year.  So while working, she took classes that would eventually help her when going into nursing or med. tech. 

Well yesterday was her first class in phlebotomy.  You would think it was her birthday (which is tomorrow), Christmas and Easter rolled into one.  Her excitement was contagious.  LL and I couldn't wait till she got home so we could hear all about it.  She and we were not disappointed.  I don't think there was a thing that could have wiped that huge smile off her face.  She is so happy that she is finally starting on the path she has chosen.  And as a parent, it just doesn't get better than that!

Another Doctor Appointment

I just returned from my appointment with my cancer surgeon, Doctor L.  He said everything looked good and had a couple more suggestions for me when dealing with my digestion "issues".

This is the appointment I go to every three months.  It is invasive, with prep that I have to do before hand and the exam requires air pumped in me and a scope.  Many times I come away from this appointment feeling pretty good.  Today's exam has left me not feeling so hot.  Pretty sick to my stomach and a bit of pain.  So, even though the weather is beautiful right now and lots to do around the house.  I think my afternoon will be a lazy one.  Still, good news

Early Morning Rising

Well hello there.  4:00 AM here and you know what that usually means......Bad night:(  I need to get my detective hat on and start itemizing all my food again.  I might of been glutened.  What I ate for dinner had no gluten.  But what was different is that Bailey made dinner for her dad and Rett last night.  Pasta alfredo with garlic bread.  Looked and smelled great and no I did not eat any.  But I made my dinner afterwards while there was crumbs and glutened food all around.  But I was careful.

So the other choice is that something I ate yesterday, I am allergic to.  I have two suspected foods, so I am going to have to journal my foods for a while and test things out.

So here I am a bit worried.  Dr. L's office called a couple days ago and moved up my appointment.  Which means I go to Portland tomorrow for my exam.  This isn't fun under the best of circumstances.  But because of my bad week or so, I have open sores.  So the enema prep and the scope exam will bring more than a little discomfort.:( 

So I have had little sleep but after tossing and turning a couple hours, I decided I might as well get up, write a post and watch a bit of news.

Something you might notice in the next few days, I am starting to revamp my blog a bit.  Take some things off, add some other things.  Not getting rid of any posts, just changing it up a little.

Bento-Tiffin

I was able to bring David home from the hospital late afternoon yesterday.  He is doing great!  I am going to mosey on over there in a little while, but want to make sure Max is up and moving before his staff gets here.

Now on to my love of Bentos.  This weekend, while shopping for some clothes, I bought a couple "Tiffins".  I needed to look up why they are called that.  Tiffins are a version of bentos from India.  Well actually, they originated from British Indian culture.  It is not exactly like bentos from the Japanese culture, but when it comes to the containers......they are very similar.  But for continuity, I will call my tiffins, bentos from this point on.

This first bento is from World Market.  I love it.  It is sturdy, easily cleaned and small.



If I find I use it a lot, I might go back and buy another set so that I can put in all my leftovers for lunches when not at home.  I find I leave my mom's house and other places earlier than I would like because I am hungry and need to go home to eat.  Maybe having more available, just to grab as I am leaving home would be a good thing.

It is small but when I put leftover main and side dish in both levels, like I did in the picture below, it really is enough for two meals.  But I am thinking, when I go to Moms or other places that I know I will need a meal, I will fill one level up with a nice green salad, and it will be perfect.


This other bento is like the one I bought last year.  Last years version had the same size containers but with four levels.  Which is perfect if you are going somewhere for several meals and snacks.  Or are serving many people, but I have found it far too big to put in my simple meals.

I bought this one because it is cute:) and slightly smaller, with just three levels.  It is at Target, in their seasonal section.  I will be using this for when I go to family picnics and going to be hours away and wanting a meal, salad and maybe a few snacks or chips.  It really is a pain to have to think this much about keeping my food clean and gluten free.  But if I have to be this strict, I might as well have something fun to pack my food in:)

Week 24, 2011

We had a good weekend.  Saturday, we went around our place, inside and out, collected things for a load to the dump.  LL and Kane took it.  I stayed home and cleaned the garage a bit, made GF brownies and trimmed and debudded some rhodies. 

Sunday, Bailey and I ran to Salem to buy some clothes since I have put on too much weight for a lot of my wardrobe:(  I found a dress and a couple tops at Target and Ross.  I have been resisting spending money frivolously lately, but I couldn't resist buying a bento (tiffin) at target and then a small tiffin at World Market.  Photos of my prized tiffins will follow sometime this week.  Max had another stomach issue.  Don't know if it is another bug.  But I am thinking I need to look into gluten issues.  Gluten intolerance is very common with people with Autism and can be genetic.  So, he may be a lot like me:(

Then we went to our friends Michele and Chuck's home for a graduation party for their son Devin.  I have known Devin since he was four.  He was the sweetest boy and has grown up to be a fine young man that his parents are proud of.  I am too.

 So for the rest of the week, well, I am going to be flexible and be available for my brother David who is having surgery.  But this is what I know for sure.

Monday-Going to Silverton Hospital which is just around the block from my house, to be there before David goes into surgery.  I will probably go back and forth to Max and the hospital through out the day.

Tuesday-IF and I do mean IF the doctors release David, I will take him home and spend the day with him.

Wednesday-If David still needs help, I will be at his house.

Thursday-I will get things ready to go to Campsite if the weekend looks good.  Need to cook GF food ahead of time

Friday-If the weather looks good, I will finish packing and go to the campsite. (I hope, I hope).

Mine Field with Wrong Map

I am finding that being new to living Gluten Free is like walking through a mine field.  First the field needs to be cleared.  I have a separate cupboard that contains the bulk of my GF foods.  I try to keep my kitchen crumb free.  I use pans that are residue free and usually will give the clean pan a quick wash before using, just to make sure.  But sometimes questionable foods come into the house.  And that is when a good Map is needed.  Lately, when something prepackaged comes in, if I don't see an ingredient with gluten, I will still get on the computer and research the product.  Because some products that should be gluten free are not, they may be manufactured in a plant that has products with gluten. i.e. most oatmeal.  Also, I have been getting into the habit when dining out, talking to the cook, just to make sure what I am ordering is GF.

So a person would think I would be doing great living Gluten Free.  Well..........Not so much:(  I have been glutened twice this week.  The first time is my own darn fault.  Last weekend, LL and I stopped at Marion Forks for breakfast.  My breakfast was gluten free, but some restaurants, because of the type of food and prep. just are not able to serve a safe meal.  Because of grills, mixes, and small kitchens, I find it is unrealistic to expect even with their best effort, a GF meal.  I need to resist going to many yummy restaurants for this reason.

Last night, I was just starting to feel recovered from the weekend glutened episode.  I made a fast, safe dinner for myself.  Later, I wanted something sweet.  Bailey had bought frozen fruit bars made mostly of fruit.  Looked on the ingredients.  Nothing had gluten in it.  But it did not say gluten free.  I got on the web site and looked up the bars.  It showed that underneath the ingredients on the box, the words "Gluten Free".  So I just assumed I missed seeing it on our box and didn't recheck.  I ate a raspberry bar.  Oh my gosh.  About 45 minutes later, I knew I had been glutened.  A very bad episode that lasted till after 2:00 this morning.  I finally ended up taking a pain pill, sat upright in bed and eventually fell asleep. 

So here I am this morning feeling like sludge.  I woke up an hour later than usual, but am still in my pj's trying to get myself moving.  I did recheck the box in the freezer.  No where on our box does it say Gluten Free.  When am I going to learn.

So today, if I feel up to it, I am going to the store to buy some food to make meals and snacks that actually say Gluten Free on the package.  Anything less strict is just too risky of me.  Unfortunately, it will take days to get things back on track for my body.

St. Mary's Steeple

Great news!  No cancer detected.  Still in remission, and well over the halfway mark to 3 yrs.  5yrs is the mark of being considered cured, but with my type of cancer, all the doctors say it almost never returns after 3 years.  My 2 year anniversary will be in October.  Hip Hip Hurrah!!

Made it to Mt. Angel in time for the removal of the steeple.  Here is a picture I took yesterday.


This is today with the crane getting ready.  There were a lot of town people and some from far away to watch this.


Just after I took this next shot, my dear brother David walked up to me and now I knew why my mother was mortified.  He has been working on his pool deck and didn't bother to change his shirt.


Can't even imagine this shirt surviving going through the wash.  Maybe he never washes it.


Without hardly noticing, the steeple was moved slightly and stayed in this position for 15 minutes or so.


And then it started lifting up.

This church is very special.  None like it around our area.  My mom and dad were married here.  I was baptised here, first communion, confirmation, and I was married here.  My children were baptised here.  My very beloved Dad's funeral was here. 

This church is special for anyone who has been blessed to be in it.  It's very special to me.

Week 23, 2011

LL and I had such a fun relaxing weekend with Steve and Kris.  We went for a long walk along the river, we visited at the pool and enjoyed the hot tub.  We had a lovely dinner and listened to good music.  And then took our time coming home.  Stopping often to let me enjoy the views and snap some pictures.  By the time I got home, I knew I was glutenized.  Note sure if it was the bite of crouton that went in my mouth the night before or a gluten free breakfast that had cross contamination.  But by early afternoon, by the time I got home, the rest of the day I had accidents and pain.  Not pretty.  But I feel so much better this morning.

Today, Monday-I have already got my walk in, been to the store for dog food, cleaned the kitchen and made a yummy dinner in the crock pot for dinner.  I need to do a few things outside but am working inside the house for the most part today.

Tuesday-I have a meeting for my sister Kathy first thing in the morning.  Then I will run some errands for LL and I.  Just going to make sure I don't eat breakfast and wait till I get home for lunch.

Wednesday-???

Thursday-Again no breakfast because I have an appointment with my Oncologist mid morning.  I am always nervous going to either of my cancer doctors, and I have to see both of them this month.  Still if everything is OK, it will be a big milestone in the remission timeline:)

Week 20, 2011

This week I am planning on no plans.  Still not feeling very well.  This cold is a nasty one that has zapped much of my energy.

Over the weekend, LL and I did take the RV to Millers Crossing and stayed the night there.  We finished getting the spot ready for the summer.  After I am done writing this post, I will upload and post pictures.

On Sunday, we went out of town over night and got back yesterday afternoon.  For this week, I hope to pick up our garden plants, and spend as much time outside as possible.  Hopefully, breathing fresh air will help my cold.

Looking at the calendar, I am amazed that June is almost here.  Although the last couple days have been nice, it still feels to me like it is April.

Yikes, I Feel Bad

Having had a nice Mother's Day Sunday, especially spending time with all three kids, I am having to pay a price I did not expect.  Kane came over on Sunday with a lousy cold.  Yesterday, LL came home early from work with a lousy cold.  I, last night started feeling bad and this morning I am dealing with a lousy cold.  I mean a really bad one that has already headed down to my chest.  After coming home yesterday, LL went straight to bed and drank tons of liquids.  He felt a bit better today and went to work.  So as he was leaving, he said, "Sleep and drink lots of water".  Yes Sir!  So today I am doing nothing but sleep, read, drink, and feel miserable.  Truely one of the hardest hitting colds I have ever had.

LL and I went for a scooter ride on Sunday.  Our weather is so unpredictable lately, that when we saw it would be nice for a few hours, well we did not want to waste it.

I made sure my Baby was on board so I could take a couple pictures.  I wanted to get a picture of Mt. Angel from a different angle.


After taking that picture, I turned around to look at the huge nest on a pole.

I realized there was a couple birds and a good person would have left them alone.  But it was me, so I made LL ride over to see if he could get them to move.


Well hello there birds.

I need to get moving.  Hope to get up north to Whole Foods.  Need to do it early because even though I have been careful with my eating, I have been having "issues" over the last few days.  It always seems no matter how I am eating, after my body adjusts to the change, I start having "issues" again.  But it is still a huge improvement from when I was eating gluten.  I am just a little sad that once again, I am having to be more of a hermit.  Oh, I still can get out and go places, I just can't eat that day till I get back.  So since I am already hungry this morning, I need to get going because from start to finish, this trip will take about 3 hours, plus I want to stop by Mom's.  So have a great day.

Blowfish and Meat Loaf

When I had my first surgery for cancer, my first surgeon, who was not a cancer specialist advised me to stay as thin as possible for further early detection because I carry my weight in the middle.  Not by choice, but I did lose weight, got really thin and felt weak.  After all my surgeries, radiation and chemo, reversals of ostomies and lots of intestines cut out, I started gaining.......and gaining.  Was not eating much more, but it did not make a difference.  Fast forward to my last appointment with my Cancer surgeon.  He kept saying how good I looked.  I finally said, "are you kidding, I have gained so much weight".  He said I scared him how thin I got and that the closer I am to my precancer weight, the better.  Well, I wanted to tell him "If you wanted me to look like a BLOW FISH, why didn't you say so".  Actually, I told him what the other surgeon said and Doctor L., who specializes in cancer said, "No, with my type of cancer and treatment, it is best to have reserves, because the surgeries and treatments are too hard on the body".  And he said in my case especially, with my history, I tend to drop weight too fast and need the reserve.  So if I have a recurrance, I will be able to handle what lies ahead.  So my pride has to be set aside, but really do need to stop gaining and just maintain where I am at.

But enough about me.  This story is about my Beau.  When I got him, his past owner said he tends to gain weight.  I was mindful of that and he maintained for quite some time.  But over the last few months, as I have gained, my sweet Beau has gained big time.  My sister Kris mentioned it a few weeks ago.  I got a little defensive.  She could of said, "Konnie, you are getting fat", I wouldn't have liked it but I would have taken it better than her saying what she said, "Konnie, Beau is getting fat".  Fat? FAT?  Not my baby.  Well, Bailey had been saying for a while that Beau was a cute fatty.  Still, I do not want to hear anything bad about my baby.  Although I have noticed it.  And I know it is not healthy for him.

Friday night, LL, Beau and I watched Seabiscuit.  Can you imagine I have never watched it?  So as the end was coming and Seabiscuit was winning the race, I cuddled up to my beau and said, "Oh Beau, that is just like you, you are my own Thorough bred".  LL looked over at us and said, "he is not a Thorough bred, he is a Loaf of Bread".  Ha Ha, it was funny at the time, but then we came home and LL relayed the story to Kane.  And of course Kane had to add to it.  "Beau is not a Loaf of Bread.........He is a Meat Loaf."  Curse them all!!!

Well I must say, Beau and I took three long walks at the camping park, and this afternoon, we took another long walk.  But lay off my little doggy.  Call me pudgy but my Beau is perfect.  Just a little MORE perfect than usual.

I need a Yogi

Time gets away from me so easily.  My days blend in and before I know it, another week has gone by.  I know, it's only Wednesday, but when you belong to a large family and you personally have things going on, even a hermit feels like there is not enough hours in the day.  Hermit..........I really have been less of a hermit lately, thanks to watching my diet like a hawk.  Anyway..........I ended up spending most the day with Mom today.  I also got great news.  My doctor told me my scans showed no existing cancer.  I also have OK news about Kathy.  We have been granted an extension on her funding.  This means she does not need to move right away, but we will need to still aggressively look at all our options.

When I think about my days and wonder why I feel like I am always trying to catch up, I do know I have the privilege of being able to help when things get hairy for other people.  My mom hasn't felt well this week.  Probably a bug, but today we got her into the doctor and took her to the hospital for a couple tests.  Nothing bad developed from the tests and hopefully in a few days she will feel better.  Then there is my son Max.  When dealing with his disabilities, there is always going to be bumps in the road.  And he has been feeling low.  But again, I have been able to help him through this and I hope he will be feeling better for a while, (until next time).

Thinking about my own "issues" and how time consuming it is to keep me functional, and losing sleep over any aches and pains until test results come back, well that is the real enemy.  Worry.  Worrying really does no good and at times makes things much worse.  I can go a few weeks living my simple life, feeling peaceful, sometimes joyful, sometimes lonely, but all in all.......Well and thankful to be alive.  And then I go through days like the last few where I worry about my health, worry about my mom, worry about Max, and worry about LIFE.  And it feeds off itself and does no good. 

But I know myself and know that this too shall pass.  It comes in spurts.  I should be celebrating my good doctor's report, Kathy's reprieve, and the upcoming Easter holiday.  But because of lack of sleep, and wanting my mom to be her spunky self, wanting Max to be his delightful self, I am just running on empty for a bit.  Hopefully, a good night sleep, and a good day for my mom and Max will make things better.

On a up note, when waiting at the hospital today, I looked at a magazine called Cure.  It is a whole magazine devoted to Cancer.  Well I swiped it.  Oh I will return it, but there was a couple articles I wanted to read.  One was on Chemo brain.  It does exist.  Some doctors for years denied that chemo damaged the brain.  But now I know there is evidence that the treatments can cause a lot of cognitive damage and that it sometimes takes a long time to recoup the brain function.  So I am not crazy.  Just taking my time to recoup:)
Also, another article talked about the huge benefits of yoga for cancer survivors.  I have not started doing yoga which was recommended by my doctor.  I think, had I been doing yoga these last few days, I might have been able to sleep better and feel less stress.  So anyone who talks to me for a while, ask how my yoga is going.  Need to stay accountable, you know!

The Human Sprinkler

Today I have my CT-Scans.  Comparing this test to so many other tests and procedures, this is a piece of cake.  I am up early so I can have my coffee.  I can't eat or drink for 3 hours before test, except the barium drink.  Yuk.  I drink 15oz of this thick chalky drink 2hrs 15mins. before test, 15 more oz 1 hour before.  And 15 more ounces right before test.  I will wear a diaper and hope for no accidents before test.  I will lay on a table, they will but an i.v. in me and shoot dye that makes me hot all over and feel like I am peeing my pants.  Then they run me through a tube a few times while I hold my breath.  That's it.  Then I will have "issues" for a long time afterwards because of the barium drink.  Not too bad of a procedure, the worse part is just drinking the stuff.

This has made me think back to all the tests and procedures I have had over the last couple years.  I have been in positions with my bare bottom and a room full of men so many times, I really have no embarrassment any more.  But the worse time was when I was having a test that required me to drink really thick chalky stuff, I had an ileostomy at the time and they made me take my pouch off so they could put a scope through my stomach.  They also gave me a barium enema up my bottom at the same time and while doing this, told me to hold it.  Well, just wishing it so, isn't going to make it happen.  They had to keep putting the stuff up me, and shoot pictures, roll me around in my own mess, put more stuff up me and so on.  In the mean time I have the other stuff I drank shooting out of the hole in my stomach as they tried to get a scope in there.  After they were done, this young man around my son's age helped me off the table, held a diaper at my stomach while I put another diaper on.  All while in a room with a doctor and two other technicians.  All men.  Oh the humiliation.  So this nice young man walks me to the bathroom and through my tears, I ask him to get my husband. 

Now this is the reason I know my dear LL is probably never going to leave me, because this would have been the time if any for him to run.  He walks in, I am sitting on the toilet with diarrhea, crying, stuff shooting out of my belly, and I start to throw up.  Now that's real talent.  Most people, when sick, can have diarrhea and vomit at the same time.  I had the talent of having stuff come out of my three ways at the same time.  And LL had the privilege to witness it.  Poor man had to clean the floor, help me get dressed, I couldn't get myself dry enough for a new pouch so I had to keep putting towels and diapers on my stomach, and he had to get a wheel chair and push me out of the building fast,  then drive me 35 minutes home.  I must say this is how weird we are.  While sitting there with my body acting like a sprinkler, LL and I both got the giggles so bad we were practically hysterical from laughing.  Yes, he is a keeper.

So today really is not that big of a deal, the hardest part is just waiting for the results.

Real "Issues", Real Food

Last month, I did the Real Food Challenge.  Doing this, along with an Elimination diet, I have made huge progress on figuring out how to eat so that my digestion allows me to have some sort of life.  Let me update you a bit on this.

I have blogged in detail about not having a rectum, what use the rectum serves for people, how my body works with out a rectum, the problems, challenges, etc.  I have been trying to find a way to eat and live so that I do not have to put back in an ostomy.  People live very well with ostomies.  If I had to, I would have one again.  But I had some pretty serious issues that are unique to me with the ostomies.  Because of the cancer, surgeries and radiation, my intestines that I have left do not work normally.  So with the ostomies, (I have had both kinds,) I was easily dehydrated, easily had blockages, and because I have very sensitive skin, I would regularly have painful wounds.  So, figuring out my food issues is extremely important to me.  But even if I eat perfectly, I will always have "issues" because of the lack of rectum.

But I am getting to a point where I think there is a good possibility that I will avoid getting an ostomy.  Yes!  This is what I have figured out so far.  I am very gluten intolerant, also have allergies to nuts (maybe some are OK, but have not figured it out yet), can eat fish, but only a little chicken and beef.  I can eat eggs, dairy (small amount), almost all fruits and vegetables.  Grains without gluten. 

What surprises me, is how sensitive my system is to processed food.  Foods with preservatives, hormones, dyes, etc.  Through research, I have a theory on this.  It takes a lot to digest these ingredients.  Lots of time, lots of healthy intestinal tissue.  I have neither.  Because some of my small intestines have been removed, the remaining is radiation damaged, a good part of my large intestines are gone, no rectum, my intestinal tract is much shorter and food goes through me much faster than the average person.  And what digestive tract I have left is so sensitive that it can not handle any junk, and very little hard to digest meat.  So if I have processed foods or too much meat, my body rebels. 

This means I need to eat clean, pure foods as much as possible.  So I have been developing a little routine to help keep clean foods available.  Once a week, I buy a package with two boneless, skinless, hormone free, free ranged, fresh chicken breast.  Because LL and I eat so little meat.  These two chicken breasts are plenty for us all week.  I use the meat as an ingredient, not as an entree.  I poach them in water and what ever old vegetables I need to use.
 

This gives me two breast for meat and also a couple cups of clean broth to use in my stir-frys and other dishes.


When cooking rice and roasting vegetables for a meal, I make enough extra for my lunches for the week.

Above is roasted vegetables and rice.  Rice?  Yes, organic black rice.
Very flavorful, and packed with nutrients and anti-oxidents.
Try it sometime.

When baking a potato for dinner, I bake a couple extra to make hashbrowns for breakfast.


When making fish for dinner, I will make one extra for my lunch the next day.

I eat on a small 6 inch plate now to keep my portions small.
If I eat too much food at once, this also triggers "issues".

I will make deviled eggs for a quick snack of protein.


And I am learning to have just a small piece of fruit to quelch my sweet craving.  (this is not quite working yet, but my taste buds are changing).


I must admit, I still get in the mood for something fast and junky.  I just don't have that luxury to give in to that craving.  I would pay for days.

Camping Spot

My, I have a lot of friends and family happy for LL and I.  Many of you have e-mailed or face booked me about our new camping spots.  Lots of congrats, and a few questions. 

Our camping spot is in a private park.  It is our spot every year, as long as we obey the rules and pay the yearly fees.  We can pick out a different spot next year if we want, or get on a long list to get a spot on the river, or a full hook-up spot.  These lists have a 8 to 10 year wait.  Frankly, if we are not on the river, I don't think we will likely want to move for a long time.  Our spot will take a bit of work to get into shape and once we do get it into shape, well, who wants to give it up after that?  Also, the location of it is really good.  Although Marlin has a bathroom and water, our spot is close to bathrooms and water.  Also, with no one behind or in front of us, it gives us more room and privacy.  Max will be able to be...........Max.  


We do not have a view of the river, but there is a view point near by where you can take lawn chairs.  I really don't know this for a fact, but the map did say this.  The river is a short walking distance and if we have a guest who can't make the walk, there are places to park your car by the river.


But back to our camping spot.  The cool part about this being a private park is that with in reason, you can do what ever you want with your spot.  Build a deck, a storage shed, make tent sites, put up natural material fence, gravel drive, RV spot etc.  LL and I are planning on clearing off a drive way and RV spot which will be graveled.  Put some paver stones for a kind of "deck".  LL is going to build a new picnic table, but there is an old sturdy one there that when it drys out I will sand and paint.  We don't like where the fire pit is and the type, so we will put a new one in a different location.    We will put some sort of storage up, but we do not want to spend lots of money right now so we will watch Craig's list or LL will build something but we will not be in any hurry.  Basically, we will groom and improve the drive, RV parking, and a middle "living" area for eating and fire pit, clear out a couple spots for tents, but we really want to keep the perimeter as natural as possible. 

Now, moving on.  I really had a rough evening and night last night.  I am sure I did not eat gluten.  But, retracing all my eating, there can only be one culprit.  Jelly Belly Beans.  I have been eating clean foods for quite a while.  No processed foods, mainly one ingredient foods, like rice, potatoes, vegetables stir fried or roasted, raw fruits, and fish with occasional chicken and beef in small amounts, and Very rarely.  My body seems to be doing well eating like this.  But this requires much planning and preparing.  Sometimes a person just wants something to snack on.  Well a couple days ago, I was looking at the Easter candy at the store and noticed Jelly Belly brand of jelly beans are gluten free, so I bought some.  I really did not think it through.  I ate them.  Boy Oh Boy,..........Bad "issues".  What was I thinking.  Tons of ingredients and many, many dyes.  It is official.  I am now a fish loving, grass eating, organic eating, fresh natural food eater for the rest of my life.  I really don't think I can go back and eat any other way.  That means very few restaurants, no fast foods, absolutely no processed foods.  No gluten, no nuts, no dyes, no preservatives, no hormones, etc.  The difference of days and days of relief, (still have "issues" but tolerable issues), versus pain, accidents, embarrassment, and loss of freedom.  Well there really is no choice.
